I want to have a fresh Antergos install on my computer over my current Windows 8.1 and Ubuntu (with a borked GRUB bootloader) dual-boot solution. Do I have to do any pre-configuration, such as deleting one of my partitions, before proceeding with normal install, or will the installation process re-partition for me?

Just make sure you have at least 10 GB of free space on your drive. But besides that I think you’re good.
